Why I like it: A multiple trophy winning blend of the classic varieties used in Champagne and Sparkling. Hand picked, whole bunch press [this adds structure and finesse] and like the traditional wines from Champagne, the secondary fermentation [where the bubbles occur] happens in the bottle.  The wine is stored for 4 years before release.
